Insalata Caprese – A first with fresh mozzarella

I had fresh mozzarella in the fridge. I really didn’t have time to make anything fancy yet I knew I had to use it soon! It was quite expensive and I didn’t want to waste it despite thr fact that It was purchased on impulse. Me and impulse shopping are BFF.
 
In Italian, this salad is called “Insalata Caprese” which means salad from Capri. No cooking, no mess. Ah I love easy peasy recipes. Best of all, it’s such a classic beauty. The combination of colors complement the combination of flavors. I guess this would make a great appetizer!
 

I saw mozzarella in a new light. It was so so good and fresh! I already bought my 2nd pack of fresh mozzarella! Told ya, me and impulsive shopping are BFF.

Insalata Caprese

Ingredients

Scale
  • 2 large ripe tomatoes, peeled and sliced 1/4-inch thick
  • 8 ounces fresh mozzarella, sliced 1/4-inch thick
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons extra-virgin olive oil
  • 8 fresh basil leaves

Instructions

  1. Arrange the tomato and mozzarella slices on a platter or individual salad plates.
  2. Sprinkle with salt, pepper and Drizzle with the oil.
  3. Garnish with the basil. Cut it into very thin slices or tear into bits and sprinkle on top. Serve immediately.

    Bought it at cold storage. Giant pun ada but in small packs. They don’t have it all E time though….unlike Cold storage. 🙂
