Easy Cucumber Salad

This is a favourite at home…esp when it’s eaten with curries, chapatis, nasi briyani…etc2. It’s awesome with fried chicken wings too! It’s a simple version of Acar Timun actually. I usually add strips of carrot too. I had none in the fridge, so I had to omit it.

Simple Cucumber Salad

Ingredients

Scale
  • 2 Cucumbers – Washed, remove centers and cut into 2.5cm strips.
  • 1 Green chili – sliced
  • 1 Red chili – sliced
  • 5 shallots – halved
  • 5 garlic – halved
  • Chopped mint/coriander leaves
  • 3–4 tbsp Vinegar
  • 2tbsp Sugar
  • Salt to season

Instructions

  1. Mix everything in a bowl. Keep it in the fridge for at least 30 mins or more so that the flavors combine well.

Notes

This keeps well up to 2 days in the fridge.

    I love side like this,fast to make and good to eat…although I must say that nothing beats the good ol’ taste of acar timun esp when its done right…:-)Thanks for sharing.

    You are most welcome Zee ๐Ÿ™‚ I have to agree with you. Acar timun is deff E best. I especially like the Indian style Acar Timun…which normally has less tumeric. I like mine with extra toasted sesame seeds too! ๐Ÿ˜€
