Bread and Butter Pudding with Vanilla Sauce

Hello people. No you didn’t accidentally landed yourself on an amateur poet’s blog. This is still a blog for food. Unless the above poem caressed you guys so much that I get requests to start a blog for my “original poems” which is next to impossible as  I have negative amount of talent in writing poems so I should stick to writing about things I am familiar with. Like this bread and butter pudding with vanilla sauce and my favorite blue jug.

I heart this jug. It’s a part of a complete tea set bought by my late father. This beauty is more than a quarter of a century old. Yup, this baby here should have won the Silver Jubilee award.  Dad bought it from Colombo and this set is older than me. We used to entertain guests with this set pretty often when dad was still around. He would invite his friends over and mom would make her special chai (tea) that guests always raved about. We do not use this set as often now. It is being used on special occasions only and subconsciously, I always take extra care while handling this. Like how I would handle the memories of my late dad. The same fondness and tenderness.

So yes,  I made bread and butter pudding with vanilla sauce that day. Bread and Butter Pudding is easy and it is often foolproof. It is a great way to use up leftover bread and you can basically use any type of bread. My favorite would be croissants and panettone. Baguette works wells too but I would normally spread a good amount of butter on the sliced baguette.

This bread and butter pudding is already delicious on it’s own but why wouldn’t you serve it with the vanilla sauce if it brings the pudding up to another level?

Yup. I just embarrassed myself, in-front of the whole world.
I am just gonna stick to cooking and baking now.

Bread Pudding with Vanilla Sauce

Ingredients

For the bread pudding

  • 6 large Croissants
  • 0.5 cup heavy cream
  • 1.5 cup milk
  • 3/4 cup sugar
  • 3 eggs
  • 2 tsp vanilla

For the vanilla sauce

  • 1/2 cup brown sugar
  • 1 cup fresh milk
  • 1/4 cup heavy cream
  • 1 egg
  • 1 tablespoon cornflour
  • 2 tablespoon butter
  • A pinch of salt
  • 1 tsp vanilla extract

Instructions

For the bread pudding

  1. Preheat the oven to 350 degrees F.
  2. Whisk eggs, sugar and vanilla.
  3. Add in milk and cream. Mix well.
  4. Tear the croissants into pieces and put in a pan/dish.
  5. Pour mixture over croissants and leave to steep for 5 minutes.
  6. Bake for 40 mins or till golden brown.

For the vanilla sauce

  1. Mix all the ingredients in a saucepan and heat over really low heat.
  2. Use a small whisk and continue stirring until sauce thicken and coats the back of a spoon.
  3. Serve with the pudding

Notes

You can also use baguette instead of croissants.
Just spread the baguette with some salted butter.
