Rachael Ray Bacon Wrapped Asparagus

What would you do if your long flowy black skirt was stuck in the wheels of the supermarket trolley?

Basically you have FOUR options.

  1. Cut it (That is gonna spoil the skirt obvio)
  2. Pull down your skirt (Not if you are wearing grandma undies please)
  3. Seek help from the cashier or the salesperson. (Depending on who’s cuter.)
  4. Bring back the supermarket trolley. (I would do this)

Yes, I was at the supermarket last week and I had to push the shopping cart to and fro many times, to get my skirt out of the wheels from the cart. You might be thinking, “Who wears a long flowy skirt to a supermarket??”

I do. Now please don’t play the judging game on me.

I am glad that I didn’t cause a huge embarrassment to myself. It took mad acting skills from my side; pretending to be all cool about it when my heart was pounding at 100 beats per second. On another note, I have always wanted a supermarket trolley. I am just saying. The skirt incident wasn’t a plan to get the trolley back home okay? However I wish it had worked. Imagine pushing a shopping cart around in the house. I would pile up my favorite snacks (berries, cheese and apple chips) and push it along with me, to the bedroom, to the kitchen and everywhere around the house. How convenient!

Anyways, last week was my cousin’s little girl’s birthday and she wanted a frozen cake. My cousin’s wife approached me and I just couldn’t say a no to her. I am glad I didn’t. The little one gave the loudest and cutest of squeals when she saw the cake. She likes Elsa apparently. While I was making the cake, “do you wanna built a snowman” kept ringing in my head. It is either the song is infectious or I am very young at heart and I strongly believe it is the latter.

Bacon and Asparagus, where have you both been all my life? I have eaten tons of Asparagus especially this 5 ingredients lemon asparagus and quite a bit of Turkey/Beef Bacon but together? Dang, it was Ah-mazing. I never knew bacon tasted so good with asparagus! Even my brother who isn’t a huge fan of asparagus enjoyed a few bunches of these.

Asparagus and bacon make a perfect couple and if you’re not a fan of asparagus, then it is an even better reason to try this recipe. You will be pleasantly surprised. I wanted to try a recipe that wouldn’t disappoint me as I spent 10 bucks on these Australian’s asparagus. I am sure I made Jamie’ O proud.

Rachael Ray Bacon Wrapped Asparagus is delicious guys. The marriage of crunchy asparagus + slightly salty, crispy bacon totally scored. Me like it very mucho and I would be revisiting this recipe often. Infact, I have already placed this on the Christmas Menu. When it comes to Christmas’s menu, I have never procrastinated. The moment I am done with the dinner of Xmas 2014, I would immediately think about the menu for 2015. You can say I have selective efficiency.

This is a great make ahead too. If you are expecting guests, just season and wrap the asparagus with the bacon ahead of time and pop it in the oven, 20 minutes before serving. Easy peasy. Go and get your asparagus and bacon today! And get me some too, while you are at it because I need to make this again. Yes, it is a need.

Ingredients

Scale
  • 1 1/2 pounds asparagus spears, trimmed 4 to 5 inches long tips
  • Extra-virgin olive oil, for drizzling
  • 250g bacon (I used beef bacon)
  • A few grinds black pepper and salt
  • Chopped chives or scallions for garnishing

Instructions

  1. Preheat oven, to 400 degrees F.
  2. You can grill these too.
  3. Lightly coat asparagus spears in extra-virgin olive oil. Season the asparagus with black pepper and salt.
  4. Gather 2-3 asparagus (depending on the size) and use a slice of bacon to wrap the bundle and secure the spears together.
  5. Repeat with remaining ingredients.
  6. Bake/grill the asparagus for about 12 minutes until the bacon is crisp and asparagus bundles are tender.
