Peach and Mango Smoothie

I was looking forward to baking over the weekend as I was supposed to give my cousin a box of cupcakes for a baby shower and prepare a butter cake for my aunt. I also wanted to do some “personal baking” too. You know the one’s to satisfy your cravings. I have been thinking of nothing, but blueberry scones since I bought that XXL sized of blueberries from the supermarket. So I told mom to get 3 sticks (250g x 3) of butter for me.

1 stick for the cupcakes

1 stick for the butter cake

1 stick for the blueberry scones

She came back and proudly said “I got 4 sticks of butter instead” I thought hellalujah! That means I can make double batch of scones and stuff myself like crazy.

Just when I was gonna start baking last evening, I found out that Mom aaccidentally bought 2 sticks of margarine instead, thus I only had 2 sticks of butter. Yes,  blueberry scones DID NOT happen.

✔ 1 stick for the butter cake

Χ 1 stick for the blueberry scones

*inserts sad emoticon*

I don’t want to talk about scones till the time I am baking some in the oven. No 1 should mention the S-word okay?

Peach and Mango Smoothie

 

A lot of times I have heard people saying that they love to have their smoothies in the mornings. Are you kidding me? I would have a smoothie at virtually anytime of the day. Even when I am sleeping, feel free to pour some smoothie down me. I am pretty sure that I am gonna be awake within 5 seconds as I am a huge fan of smoothies especially those yogurt based ones.

I know that there are certain people who are not huge on yogurt, just like my brothers. You can still make a smoothie without yogurt. You can use other liquids instead.

  • Milk –  Regular milk, soy bean milk, rice milk. Etc.  Basically you can use any kind that your prefer.
  • Water or ice – If you need to thin down your smoothie, you can use water and ice would thicken your smoothie nicely.
  • Fruit juices – Orange juice, apple juice and grape juice would be a good start.

Smoothies are becoming my obsession especially in this sweltering heat. It is also a good way to use up all those ripe fruits that you have in the fridge! I tend to have overripe berries in my fridge and they are too precious to be fed to the garbage bin. Thus a smoothie would be the easiest and most delicious way to use them up!

I also love mangoes in my smoothie. Mango on its own is amazing. Sweet smelling, delicious and it is one of my favorite fruits in a smoothie, just like the very popular Indian Lassi. Peaches are good in smoothies too. They are not only delicious, but they are also low in calories and they are packed with numerous health benefits since it is rich in minerals and vitamins. You can either use fresh peaches or canned ones. I used canned peaches, for convenience.

This peach and mango smoothie is really stunning. It is refreshing and the combo of mango and peaches just make your taste buds smile. I like my smoothies to have a thicker consistency thus I also added some ice. You can choose to freeze your fruits instead if you do not want to add ice.

This tropical-tasting smoothie is going to make you feel like you are on a island with a blue beach even though reality is far from that.

Talking about a tropical smoothie, I think I am gonna attempt a non alcoholic Pina Colada next. Stay tune people!

Ingredients

Scale
  • 2/3 cup sliced peaches (I used canned peaches in it’s own juice)
  • 2/3 cup fresh mango (You can use frozen too)
  • 1 cup greek yogurt
  • 1 cup ice
  • 2 tablespoons sugar (or honey, agave, stevia etc.)
  • Milk/water (if smoothie is too thick)

Instructions

  1. Place all the ingredients in a blender/food processor.
  2. Blend and enjoy.
