Lemon Poppyseed Dressing

Hei people, I was down with flu. My throat still hurts though and I have to drink some water every 30 minutes else I would start a string of cough that would further pressurize my throat. Infact my throat was bleeding, until 36 hours ago. *Touch wood* I have not been having much of an appetite for the past few days. If you think that I am finally not thinking of food, then you are wrong. I am still getting frequent food hallucinations, from Pasta to Mcdonalds. Omg and that Ben & Jerry’s strawberry cheesecake ice cream!

Since I have not been eating well for the past few days, I was kinda looking forward to eating something I love. Something delicious yet simple so I roasted some vegetables. I love Grilled Vegetables and I have been vocal about it. But it is not the vegetables we gonna be talking about today.

We are talking about

Lemon Poppyseed Dressing
I was supposed to include this recipe with the upcoming post, but I thought that this dressing deserves a post on it’s own. It is after-all the star of this salad. Yes this Lemon Poppyseed Dressing is DEEE-licious. Most store-bought poppyseed dressing are too sweet for my liking, but this is more of a tangy dressing. This dressing is perfect on fruit salads, green salads or you can drizzle it over your grilled chicken or burgers. Yumzz! Although I barely had an appetite, yet this dressing whet my appetite and I could eat a substantial amount.Lemon-Poppyseed-Dressing-125 reasons as to why you have to make this.

  1. It takes only 5 minutes.
  2. Uses pantry ingredients.
  3. It is lower in calories and fat than the store bought ones.
  4. It goes well with almost anything, from vegetables to meat and seafood.
  5. Because I ♥ it.

Lemon Poppyseed Dressing

Lemon Poppyseed Salad Dressing

Ingredients

Scale
  • 1/2 onion – chopped (see notes)
  • 1 tbsp olive oil
  • 2 tbsp Greek/plain yogurt
  • 1/4 cup mayonnaise
  • 1/2 tsp lemon zest (optional)
  • 1 tsp lemon juice
  • 1 tablespoon olive oil
  • 1–2 tsp honey (start with 1 tsp and adjust accordingly)
  • 2–3 tbsp water
  • 2 tbsp poppy seeds
  • Salt to taste

Instructions

  1. Saute the shallot in olive oil for 2-3 minutes.
  2. In a bowl, place mayonnaise, lemon juice, lemon zest, yogurt, onions (with the oil), honey, and salt.
  3. Add the water to adjust the consistency.
  4. Taste accordingly annd stir in the poppy seeds.
  5. Keep refrigerated.

Notes

If you are cool with consuming raw onions, there isn’t a need to saute the onions. Just directly add the onions and olive oil into the dressing.
