 Eggplant Pizza Recipe

I have been craving for Pizzas and it has been a while since I had that cheesy goodness of 285 calories per slice. (Who eats ONLY a slice anyways?)

I am not gonna pretend that I am a health freak who is on a healthy diet 99% of the time since I am that girl who would buy the extra value meal at McDees. I know health experts have been saying that if you eat the burger, skip the fries. I, on the other hand would have the burger AND fries plus an apple pie or a sundae. Hei, stressed spelled backwards is desserts. Coincidence you say? I don’t think so!

There are times when I feel like eating healthy though. That is when my plate would be filled with these. ↓

What makes a pizza delicious? Let’s face it, for most of us, it is the toppings and the CHEESE.

As I was thinking of making a healthier version of pizza, I definitely thought of the cauliflower crust, but I was kind of lazy to make that from the scratch. I can be such a lazy bum at times. I had a huge eggplant that I purchased a few days ago in the hope of making eggplant Eggplant Parmigiana. Well, obviously Eggplant Parmigiana isn’t happening because I made these instead.

Boy, was I in for a treat? These eggplant pizzas were SO delicious. Tangy tomato sauce, garlicky minced beef and melted cheese. Me and my mom polished a whole tray of these little morsels for dinner. You can really top these pizzas with whatever toppings you choose. Bacon, shredded chicken and salami would be yummy. If you want to make vegetarian ones, a mix of mushrooms, peppers and tomatoes would be delish.

After eating these, I have no longer craved for pizza. It is almost the same thing. If you are not a lover of eggplant, you can use zucchini instead. These are also perfect for parties as this creates the perfect canapes. This Eggplant Pizza Recipe is a keeper and I am going to make this again very soon. I seriously loved this more than the regular pizzas!!

As I am typing this post, I am thinking…what if I were to make “burger buns” out of eggplants? I have a picture of a burger patty sandwiched with two thick pieces of roasted Eggplant in my. Ohmaigawd. #happeningsoon

Ingredients

Scale
  • 1 large eggplant – cut into 3/4 inch slices
  • 200g minced beef (You can also use sausages, bacon or pepperoni. Use mushrooms for a vegetarian version)
  • 1/2 cup marinara/red pasta sauce
  • 1/2 cup grated mozzarella
  • 2 garlic cloves, very finely chopped
  • 1/2 teaspoon dried Italian seasoning
  • 1 teaspoon red pepper flakes for sprinkling finished pizza (optional)
  • Slices of jalapeno and olives for topping (optional)
  • Basil leaves or rosemary for garnishing (optional)

Instructions

  1. Brush the slices of eggplant with 1 tbsp of olive oil. Season with some salt, black pepper and 1/4 teaspoon of dried Italian seasoning and grilled this in the oven for about 10-15 minutes until cooked but not mushy.
  2. While the eggplant is cooking, add the remaining 1 tbsp of olive oil in a frying pan and saute the garlic for 30 seconds.
  3. Add minced beef and saute till cook. Season with salt, black pepper and 1/4 tsp of Italian seasoning.
  4. Once the eggplant is cooked, top with some sauce, minced beef, jalapeno, olives and cheese.
  5. Grill till the cheese melts.
  6. Top with rosemary or basil if desired.
