Delicious Mango and Coconut Chia PuddingFriday: 3 hours of sleep and 21 hours of work.

Saturday: 3.5 hours of sleep and 11 hours of work.

Sunday: 8 hours of sleep + 2 hours of nap in the afternoon + 2 more hours of nap in the evening + 1 hour of reading + 4 hours of non-stop You Tubing and surfing around the www.

Should I say my lifestyle is so imbalanced or should I that say I have a lot happening in my life right now? The latter sounds better and it makes me feel all busy and important.

Yeah, so I was saying, I have so much going on in my life right now (Boy, that really sounded good)

Let’s move on to these jars of golden sunlight. ❤️Delicious Mango and Coconut Chia Pudding

Sunday was mostly spent in bed and it seems like It has been FOREVER since I had a free Sunday all to myself and it almost felt surreal. I was baking away with my cousin on Saturday and this cousin of mine is obsessed with doing housework. She spends more than 6 hours a day, just cleaning her house. Due to this, baking with her was such a breeze. Once we were done baking, she cleaned up and literally swept and mop the floors, without giving me much to work on. Such cousins are for keeps. 😀

Chia puddings have to be the easiest make-ahead breakfast. It barely takes 5 minutes and best of all, it is an excellent source of omega fatty acids, full of vitamins, minerals and fiber. This Chia pudding is prepared with only four ingredients. Chia + Coconut milk + Mango + a sweetener of your choice. Basically, you soak some chia seeds in coconut milk and once the chia swells up, you top this pudding with mango puree and garnish it with chunks of fresh mango for added texture. Delicious Mango and Coconut Chia Pudding

I personally love mango and it is in season right now as I can literally see mangoes everywhere and they are super cheap! Besides being yummy, mangoes also have many nutritional benefits. I have been making a whole lot of mango’ish stuff thanks to these delicious yet cheap mangoes, like this Mango Smoothie Bowl. ↓

This Delicious Mango and Coconut Chia Pudding is perfectly sweet, creamy, delightful and would leave you scooping right till the last drop! It felt as if I was eating dessert and it is always good when something healthy actually taste like dessert right? That alone make this recipe a winner.

Description

A delicious pudding made with chia seeds, coconut milk and fresh mango. Make this the night before and wake up to a delicious and nutritious breakfast.


Ingredients

Scale
  • 2 large ripe mangoes
  • 1.5 cups coconut milk
  • 1 cup water
  • 1/4 cup chia seeds
  • Diced mangoes, for topping
  • 2 tbsp agave (You can also use honey or just regular sugar)
  • A fat pinch of salt

Instructions

  1. Puree mangoes until smooth. Sweeten with a touch of honey if your mangoes are not sweet. (I skipped the honey since my mangoes were already sweet)
  2. Place the mango puree in a mason jar and keep in the fridge.
  3. Mix together coconut milk and water. Sweeten with honey to taste and add a pinch of salt.
  4. Mix in the chia seeds and refrigerate for a few hours or overnight.
  5. If pudding is too gooey the following day, add more coconut milk or water.
  6. Divide pudding among 6 glasses and top with a layer of mango purée.
  7. Garnish with diced mangoes and serve cold.
