Blue Smoothie Bowl Recipe

You feel a certain sense of accomplishment when you take a good breakfast early in the morning, especially if it consists of a lot of fruits or/and vegetables.

Even though I love fruits and vegetables, still at times it is difficult to get 4-5 servings of them in a day unless my mom literally places a plate of cut fruits (fork included) by my side while I am working on my computer.

Hello beautiful people! I hope your day is going on pretty fine. Today I am sharing a Blue Smoothie Bowl Recipe, a gorgeous ocean blue color of goodness. Yup, we are referring to the smoothie bowls that you can see all over Instagram. The blue comes from the blue-green algae aka spirulina. I have to say that blue spirulina is far more subtle than regular spirulina.

Smoothie bowls are the perfect healthy breakfast and they are a sheer delight as an afternoon snack too. For those of you who have difficulties in consuming your daily dose of fruits, this might just do the trick as every bowl of smoothie is packed with plenty of fruits. These nutrients dense bowls can keep you energized through morning till lunchtime. Aside from being delicious, whipping up a smoothie bowl also gives you an opportunity to get creative. Whether you pack yours with green veggies like spinach or opt for a sweeter bowl with berries and coconut, the possibilities are truly endless!

My cousin bought a blue smoothie bowl for me some time back and I just had to replicate that, based on the ingredients found on the packaging!

I used frozen bananas, along with a whole young coconut (water + meat) and also yogurt to keep it nice and creamy. If you can’t lay your hands on a fresh coconut, a mix of coconut milk and coconut water would do a pretty neat job as well. You can top the smoothie bowl with whichever fruit you prefer. I topped mine with some fresh blueberries, freeze-dried raspberries and chia seeds for some texture. Some added granola or coconut chips would do just fine!

Ingredients

Scale
  • Coconut water and meat from 1 young coconut (if not available, use 1/4 cup coconut milk + 1/4 cup coconut water)
  • 1 tbsp of blue spirulina
  • 1/4 cup plain yogurt
  • 1/2 cup of mangoes, frozen
  • 1 medium banana, frozen
  • Optional: Sweetener of choice (i used agave)

Instructions

  1. Mix all the ingredients except mangoes in the blender until smooth.
  2. Add the mangoes and process it for a few seconds.
  3. Place the smoothie in a bowl and sprinkle with toppings of your choice.
