Angel Hair Aglio Olio with Shrimps

Ingredients

Scale
  • 1 pound spaghetti
  • 500 g prawns – Shell and devein
  • 6 cloves garlic – minced
  • 1/4 cup extra-virgin olive oil
  • 1/2 teaspoon red pepper flakes
  • 2 tablespoons chopped flat-leaf parsley
  • Freshly grated Parmesan
  • Salt to taste

Instructions

  1. Bring a large pot of cold water to a boil over high heat, then salt it generously. Add the pasta and cook till al-dente for about 8 – 10 minutes.
  2. Reserve 1/4 cup of the pasta water.
  3. While the pasta is cooking, combine the garlic and olive oil in a skillet. Fry for 20 seconds.
  4. Add in prawns and cook for a few minutes. Season with some salt.
  5. Mix in angel hair. Season with salt and red pepper flakes.
  6. Add in the pasta water and a good handful of Parmesan cheese.
  7. Remove from heat and top with more Parmesan, chilli flakes and parsley.
