Ingredients

  • 200 g plain flour
  • 70 g caster sugar
  • 125 g good salted butter
  • A small bunch of fresh lemon thyme , leaves picked
  • 1 lemon, zested
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 160°C.
  2. Mix the flour and sugar together in a mixing bowl. Rub in the butter with your thumb and forefinger.
  3. Then add the thyme, lemon zest and vanilla.
  4. Push the dough in a 8 by 8 pan lined with parchment.
  5. Cut into squares or rectangles.
  6. Alternatively, you can roll the dough into a circle and place it onto a baking sheet lined with parchment.
  7. Once done, leave to cool, then put away in an airtight container.
