Ingredients
- 500g skinless boneless chicken thighs cut into bite size pieces
- 1/4 cup plain/greek yoghurt
- 1/4 cup mint leaves
- 4 cloves garlic
- 1 inch piece ginger peeled
- 2 green chilli
- 2 tbsp tandoori masala (see notes for a simple masala recipe)
- Juice of half a lemon
- A drop of orange coloring
- Butter/ghee for basting
- Salt to taste
- Toppings:
- Sliced onions
- Lime/lemon wedges
- Chopped cilantro and mint leaves
Instructions
- Add the ginger, garlic, green chili, mint leaves and yogurt in a blender and process till smooth.
- In a bowl, combine chicken, masala, blended ingredients, coloring and lemon juice.
- Marinate for a few hours or even overnight.
- Cook under the grill for about 15-20 minutes. Baste with butter/ghee and cook till it is slightly charred around the edges.
- Serve warm with rice or roti with some mint chutney or salad.
