- 1.5kg chicken wings
- 1/4 cup chopped cilantro leaves + 2 tbsp
- 1/4 cup freshly squeezed lime juice + 2 tbsp
- 3 tbsp olive oil
- 5 cloves of garlic, grated
- 2 inches ginger, grated
- 1 tbsp lime zest + 1 tbsp
- 3 tsp chilli powder
- 1.5 tsp ground cumin
- 1.5 tsp salt
- 1.5 tsp freshly ground black pepper
- 3 pounds chicken wings or drumettes
- In a bowl, combine 1/4 cup cilantro, 1/4 cup lime juice, 3 tbsp olive oil, lime zest and all of the spices and salt.
- In a large Ziploc bag, combine chicken and the mix above and marinate for at least 3 hours to overnight.
- Preheat oven to 180 degrees celcius and grill chicken till cook.
- In a large bowl, combine 2 tbsp lime juice, 1 tbsp lime zest and 2 tbsp chopped cilantro and place the chicken wings in and give it a good toss.
- Serve immediately.
