- 6 eggs
- 3 potatoes – boiled and cut into large cubes
- 1 can of corned beef
- 2 green chillies – slice
- 1 large onion – sliced
- 2 clove of garlic – chopped
- 1 tsp ground coriander seeds/coriander powder
- 1 tsp ground cumin/cumin powder
- Freshly cracked black pepper
- 2 Tbsp chopped cilantro for garnishing
- Sauté onions, chillies and garlic till light golden.
- Add in the spices and give it a good mix.
- Add corned beef and fry for 2 minutes.
- Mix in potatoes and season with black pepper.
- Place the corn beef mixture in a baking dish. Make indents to break eggs into.
- Bake at 180c for 10 -12 minutes depending on how done you like the eggs to be.
- Garnish with chopped cilantro and serve with baguette.
