Description
A delicious pudding made with chia seeds, coconut milk and fresh mango. Make this the night before and wake up to a delicious and nutritious breakfast.
Ingredients
- 2 large ripe mangoes
- 1.5 cups coconut milk
- 1 cup water
- 1/4 cup chia seeds
- Diced mangoes, for topping
- 2 tbsp agave (You can also use honey or just regular sugar)
- A fat pinch of salt
Instructions
- Puree mangoes until smooth. Sweeten with a touch of honey if your mangoes are not sweet. (I skipped the honey since my mangoes were already sweet)
- Place the mango puree in a mason jar and keep in the fridge.
- Mix together coconut milk and water. Sweeten with honey to taste and add a pinch of salt.
- Mix in the chia seeds and refrigerate for a few hours or overnight.
- If pudding is too gooey the following day, add more coconut milk or water.
- Divide pudding among 6 glasses and top with a layer of mango purée.
- Garnish with diced mangoes and serve cold.
