- 4 Tortillas (I used whole wheat)
- 3/4 cup edamame hummus
- 4 eggs
- 1 tbsp butter or 1 tbsp olive oil
- 2 tomatoes – Deseeded and sliced
- 1 green pepper – cut into strips
- 1/2 cucumber – cut into strips
- Salt to season
- 1/4 tsp smoked paprika OR crushed black pepper
- Beat eggs, salt and smoked paprika in a bowl till well mixed.
- Heat butter/olive oil in a nonstick pan. Once hot, pour in egg mixture.
- As eggs begin to set, gently mix the eggs, forming large soft curds.
- Continue cooking till egg is almost set.
To assemble
- Spread 1-2 tablespoon of hummus over each tortilla.
- Top with the scrambled eggs, cucumber strips, slices of tomatoes and pepper sticks.
- Roll up your wrap and enjoy!
