- 250 g cherry tomatoes
- 50 ml olive oil
- 2 tbsp lemon juice
- 1 bay leaf – torn
- 1 green chili – sliced
- 2 garlic – sliced
- Big pinch of salt
- Big pinch of black pepper
- A good pinch of your favorite herbs (I used dried basil and oregano)
- Lightly score the bottom of each tomato with a knife. Just cut a little X at the bottom of each tomato.
- Try not to cut through the flesh.
- Drop the tomatoes in a pot of boiling water and let it boil for 10 seconds.
- Strain the water and place the tomatoes in a bowl of cold water, or a bowl of water with some ice.
- The skin would loosen up a bit. Remove the skin and keep aside.
- In a bowl, combine olive oil, lemon juice, bay leaf, chili, garlic, herbs salt and pepper.
- Mix in the tomatoes and store in a jar, in the fridge for up to 10 days.
