One Pan Sausage and Potato Hash

Ingredients

Scale
  • 250g sausages, sliced (Any kind that you prefer)
  • 1 small green bell pepper, diced
  • 1/2 yellow, red or orange bell pepper, diced
  • 1 onion, diced
  • 2 potatoes, peeled and diced
  • 1 large tomato, diced
  • 2 garlic – chopped
  • 1 teaspoon smoked paprika
  • 2 tablespoon olive oil
  • Salt and pepper
  • 1/4 teaspoon of mixed herbs (Optional)

Instructions

  1. In a heavy bottomed skillet, heat 2 tbsp of olive oil over medium-high heat. Add the potatoes to the skillet and season with salt and pepper.
  2. Fry until golden brown and cooked through, around 8-10 minutes, stirring a few times to ensure even browning.
  3. Add the onion and cook for 2 minutes.
  4. Add the sausages and cook this for a couple of minutes.
  5. Mix in chopped garlic and cook for a further 1 minute.
  6. Throw in the peppers, tomatoes, smoked paprika, herbs and salt and cook for a couple of minutes. Serve hot.
