- 250g sausages, sliced (Any kind that you prefer)
- 1 small green bell pepper, diced
- 1/2 yellow, red or orange bell pepper, diced
- 1 onion, diced
- 2 potatoes, peeled and diced
- 1 large tomato, diced
- 2 garlic – chopped
- 1 teaspoon smoked paprika
- 2 tablespoon olive oil
- Salt and pepper
- 1/4 teaspoon of mixed herbs (Optional)
- In a heavy bottomed skillet, heat 2 tbsp of olive oil over medium-high heat. Add the potatoes to the skillet and season with salt and pepper.
- Fry until golden brown and cooked through, around 8-10 minutes, stirring a few times to ensure even browning.
- Add the onion and cook for 2 minutes.
- Add the sausages and cook this for a couple of minutes.
- Mix in chopped garlic and cook for a further 1 minute.
- Throw in the peppers, tomatoes, smoked paprika, herbs and salt and cook for a couple of minutes. Serve hot.
