Roasted Asparagus in Balsamic Butter Vinaigrette

Some of you might be looking at the title and going “Butter on Skinny Mondays”??

Butter in moderation is fine; not my words, but Dr. Ian Smith’s. Yes, that is how I roll at times, echoing back whatever the specialist said. It is perfectly normal to quote someone else otherwise there wouldn’t be a re-post feature on Instagram, a re-tweet tab on Twitter or a share button on Facebook. I’m sure you get what I mean.

I am a huge fan of roasted vegetables if you can tell from this recipe and this too. Grilling vegetables can really concentrate their flavors. I especially love asparagus. Nah, love isn’t the word.  I am obsessed with asparagus! I guess since I love asparagus SO MUCH, I would keep coming up with new recipes at regular intervals. You guys are so lucky. 😀

Today, I did an Asparagus + Balsamic vinegar + Butter + Parmesan combo. Holy asparagus! Too good. This Roasted Asparagus in Balsamic Butter vinaigrette is so simple, yet full on flavor. I could literally eat my body weight worth of asparagus each day. Come to think of it, I would have no complains devouring a plate of roasted asparagus for breakfast, lunch and dinner. That also means I would probably end up being Pencil thin for once in my life.

I have been hoping to go to the supermarket one fine day and be greeted with other varieties of asparagus. I have seen purple ones floating around the internet and white ones too. Too pretty. It seems that white asparagus is more prominent in Europe. So now I have to make a trip to Europe just to eat the white asparagus? I am so ready. Till the time, I have saved enough moolah (Read; Money) I am fine with the green ones.

Ingredients

Scale
  • 1 large bunch of asparagus, approximately 500 grams
  • 3 cloves of garlic – quartered
  • 3 tbsp Parmesan cheese
  • 2 tablespoon of butter
  • 2 tbsp balsamic vinegar
  • 1 tsp brown sugar/honey
  • 1/4 tsp dried mixed herbs
  • Sea salt and freshly grounded black pepper to taste
  • More parmesan for sprinkinling

Instructions

  1. Preheat the oven to 450 degrees.
  2. Wash and cut the ends off the asparagus.
  3. Toss the asparagus with all the other ingredients.
  4. Lay flat on a baking sheet and roast for 15 minutes, flip halfway through.
  5. Pull the asparagus out of the oven and sprinkle more Parmesan.
