1 whole Boneless, Skinless Chicken Breasts or rotisserie chicken
Salt and black pepper to season
1 tsp olive oil
4 tbsp olive oil
2 tbsp light soy sauce
1 tbsp vinegar
2 tbsp lemon juice
2 cloves Garlic, Minced
1/2 tbsp minced fresh ginger
1 tsp sesame oil
1 tbsp brown sugar
1/4 tsp of crushed red pepper flakes
1 package of lettuce or mixed greens
1/2 whole red onion, sliced
1/2 can mandarin oranges, drained
8 cherry tomatoes , halved
1 tbsp sesame seeds, toasted
Instructions
Put 4 tbsp of olive oil, soy sauce, lemon, vinegar, garlic, ginger, sesame oil, brown sugar, and crushed red pepper flakes into a blender.
Blend until completely emulsified. Taste the dressing and adjust to your taste (More vinegar or brown sugar might be needed)
Salt and pepper both sides of the chicken and heat 1 tsp of olive oil in a skillet or on a grill pan. Cook the chicken on both sides over medium heat until lightly golden and cooked through
Let cool slightly and cut into cubes.
Place the cubed chicken into a bowl and pour 1/3 of the dressing over it, tossing to coat.
Sprinkle the sesame seeds over the chicken.
To assemble:
Place the salad greens, sliced onion,and the halved tomatoes in a large bowl. Pour the remaining dressing over the salad.
Arrange chicken, mandarin oranges all over the greens.
