Twice Baked Potato Recipe

My bff said “It has been 8 months since the last post on your blog. That’s crazy.”

Wow that scared me.

I love blogging so much and I have been blogging for years now, thus I am petrified that I may give it up altogether if I don’t start the momentum again, so here I am. Yes, I have been busy with work, but that is not a good enough excuse I guess.

A lot of things have been happening from the last time I blogged. Recently, my dear uncle passed away. He was my mom’s elder brother and he had been really ill right from the beginning of this year. Although, all of us wanted him to be hale and hearty again but I guess God had other plans. Nevertheless, it was a closure to his suffering. I believe he is at a better place. He must be spending time with my grandparents and yes, my dad too. I just pray that his family are able to gather enough strength to move on with life as per normal, with fond memories of him in their hearts.

After his death, I just feel like writing. In fact, half of this post was written shortly after his demise. Somehow I needed to divert my mind elsewhere. Nevertheless, despite not blogging for quite some time, traffic has been increasing and I continuously get messages from the regular readers. Thank you, people. Thank you for the love and yes, as much as I can get caught up with life, I promise to be a responsible blogger and not go missing for another 8 months. 7 months maybe but definitely not 8. (JOKING!)

Ok, let’s focus on happy thoughts now! It is December after all and it is hard not to think of pine trees, berries, eggnog and warm spices. All the lovely things about Christmas! ❤

December also predominantly features bright shades of red and green. Ah, this is definitely one of my favorite month of the year, besides November where people pamper me with lotsa love (Read: cakes and gifts) Ah yes, my birthday was last month. 5 Birthday cakes. lotsa presents and the company of my loved ones. I definitely enjoyed myself despite being a year older now. ????

Anyways Christmas is fast approaching and what is Christmas without yummy food? I am sharing a simple yet delicious recipe for twice baked potatoes. Perfect as a side dish for 25th of December. Come on, who doesn’t love a twice baked potato? And best of all, you can make them ahead of time. I mean who needs more chaos in the kitchen when it comes to preparing food for Christmas right?

Basically, you bake whole potatoes until their insides become soft and pillowy before scooping it out and mixing it with other delicious stuffs like butter…cheese…etc. The second round of baking is to crisp up the skins and melt the cheese on top. You can also add additional ingredients like bacon, chives…etc. It is hard not to love these potatoes and with a dollop of sour cream, I can eat these every day. True story.

As far as comfort food go, this twice baked potato recipe is definitely among the Top 10 List. Creamy, dreamy and cheesy little boats of goodness. What could be better?

Description

As far as comfort foods go, this twice baked potato recipe is definitely among the Top 10 List. Creamy, dreamy and cheesy little boats of goodness. What could be better?


Ingredients

Scale
  • 5 baking potatoes, washed
  • 1 tbsp oil (I used sunflower oil)
  • 2 tbsp butter
  • 1/4 cup sour cream
  • 1/2 cup cheddar
  • 1/4 cup milk
  • Salt and black pepper, to taste

Toppings

  • Bacon bits (I used beef bacon)
  • A sprig of green onions, sliced
  • More shredded cheddar
  • Sour cream

Instructions

  1. Preheat the oven to 180 degrees c.
  2. Rub potatoes with oil and sprinkle with some salt.
  3. Place on a sheet and bake until tender for about 60 minutes.
  4. Place the potatoes on a baking sheet. Rub them with the canola oil and bake for 1 hour, making sure they’re sufficiently cooked through.
  5. With a knife, cut each potato in half lengthwise. Scrape 3/4 of the insides into the mixing bowl.
  6. Mash the potatoes and add in sour cream, cheese, milk, and season with salt and pepper.
  7. Fill the potato shells with the filling.
  8. Top each potato with grated cheese and bacon bits.
  9. Lower oven to 160 degrees c and bake the potatoes for about 15 minutes.
  10. Once done, top with green onions and serve with sour cream.
